Paso Doble Guacamole

Then I have news for you.

You've been missing out, my friend. Not only that, but you're being robbed. Robbed of delicious, whole, natural nutrients, and robbed of your money and energy (literally).

I'm going to tell you something else.

Good guacamole only take 5 mins to make.

I bet you feel really gypped now, huh?

Don't worry. We can fix it. The guacamole I make is sweet and tangy and will make you want to do the Paso Doble! Which is why I call it Paso Doble Guacamole.

What you'll need:

2T EVOO
1 large, very ripe avocado
1 small lime
black pepper
cilantro
garlic (optional)

To find a ripe avocado, give it a little squeeze-- a hug with your hand. If it is a little squishy, it's ready to give up its deliciousness to you. If it's rock hard, it's not happy to see you. Place it in a brown paper bag, shut tight, with an apple or banana, and leave it there for a day or two. It will be ready for some sweet, green lovin' in no time!

Slice your avocado, and scoop out its goodness directly into the food processor. A ripe avocado will willingly allow you to slip you spoon between the skin and the flesh and remove it easily.

Drizzle in your EVOO, lime juice, and spices. To get the maximum amount of juice from your lime, place the lime on the table underneath the palm of your hand. Press firmly and roll. This loosens up the fibers a little bit, thus producing more juice.

Pulse to desired consistency. If you like your guacamole smooth and creamy, pulse more. If you like it thick and chunky, a simple pulse or two will get the job done.
