Apple Pie Crumble

an euphonious is for life, not just xmas!
(it makes no sense, but just go with it, okay?)

Saying "Few things are as American as Apple Pie!" is kind of an oxymoron, considering it originated in EUROPE! But then again, I'm a walking, talking oxymoron myself (Primal... JUNK FOOD, two totally different ways of eating on opposite ends of the culinary spectrum). However, if Primal living has you missing your festive "All-American" (European) Apple Pie, I'm here to help. It's a great staple at both Thanksgiving and Christmas, as well as a star centerpiece at summer picnics and community gatherings. So I'll say it again: an euphonious is for life, not just xmas!
That is to say, life is too short, and food is too delicious, to feel guilty about enjoying it!
Let's do this.

What you'll need:


1/2c almond meal
1/2c coconut flour
1 egg
2T allspice
1/4c cinnamon
2T powdered stevia or xylitol
3T EVCO
1/4c butter
2 apples
1 generous scoop vanilla gelato (optional, but you're worth it!)
Homemade Coconut Caramel Sauce (optional, but oh, so good!)

Wash & dice apples.

Toss in pot with butter and allspice.
Cook over medium heat until softened and buttery. Place in pie dish.

In separate bowl, combine EVCO, egg, coconut flour, almond flour, stevia/xylitol, and cinnamon.

Mix until it begins to crumble.

Grab a handful and crumble it over the apple mixture until evenly coated.

Bake 30 mins.

Top with gelato. Drizzle with melted caramel if ya got it! (See my Coconut Caramel Sauce recipe)

Aw, yeah, babe!

P.S. This dish doesn't have to be limited to dessert. Add a handsome serving of Greek yogurt instead of gelato, and you've got yourself a hot breakfast, my friend!

Mimi, do you have a pear hanging around? I successfully made this crumble with an apple and pear and it was super delicious.

Amanda, we kinda are... if by neighbors you mean our states are next to each other, LOL. You just gotta move closer, dear!

Our states aren't really that close... You're Utah, I am EASTERN South Dakota... Seems like 1billion miles!

<3 you anyway tho... We are considering Westernish Colorado as an option for moving... thats a smidge closer! :)
